Honey Mustard Chicken

The Recipe:
1/4 cup melted butter
1/4 cup mustard
1/2 cup honey
1/2 tsp curry
2 lb light & dark chunks of chicken
TIP: For people who are not fond of handling raw meat, I suggest asking whoever is working behind the meat counter at your local grocery store to chop up the chicken into rough chunks about 2 inches in size for you. Thus, when you get home, all you have to do is dump the already chopped chicken in your baking dish, make the sauce, and stick it in the oven.
Cooking Instructions:
Evenly spread chunks of raw chicken in your baking dish. The proportion of light to dark meat is entirely your preference. I end up usually getting slightly more white meat than dark just because chicken breasts tend to be bigger than chicken thighs.
Stir all of the rest of the ingredients together and pour over the uncooked chicken.
Bake for 45 minutes and enjoy. (Serves about 4 - 6 people)
This recipe was one of my favorite go-to home baked meals my mom would make for my sisters and I growing up. The flavors are very kid friendly, achieving a perfect balance of sweet and spicy.
